Methylglyoxal is a naturally occurring compound that is present in high quality Manuka honey. Each 250gram jar contains at least 650mg/kg of Methyglyoxal. The super ingredient that gives Manuka Honey its edge over other honey!
*Hydroxymethylfurfural 27 mg/kg
Hydroxymethylfurfural is produced from the breakdown of sugar and is used as an indicator of heat treatment and ageing. The CODEX Standard recommends a maximum limit of 40 mg/kg HMF in honey.
*C4 Sugar (AOAC) 2.9%
A C4 Sugar test is used internationally to detect whether honey has been adulterated by adding sugar or high fructose corn syrup. Maximum level is 7%.
A glyphosate test indicates the presence of any residues that might be in the honey.
